John "PJ" Davis prepares some award winning ribs.
PJ's "Saratoga Style" BAR-B-Q, a seasonal operation, is
owned and operated by the Davis family: John "PJ", Carolyn, their son John, and
daughter Jady. PJ and Carolyn began barbecuing in the Capital District in 1975 and have
been at their Saratoga location since 1984.
If you'd like, wander out back and view the two 20' firebrick
barbecue pits. The chicken and ribs are barbecued "Saratoga Style" on racks that
rest two feet above real charcoal briquets. They are turned and
basted continuously with our version of the 'Cornell Recipe', developed years ago at
Cornell University in Upstate New York. The recipe basically consists of oil, cider
vinegar, salt, pepper, poultry seasoning and eggs.
The fresh chicken halves are slow-cooked for an hour and a half. The fresh slabs of pork
spareribs are slow-cooked for two hours, and our homemade hickory barbecue sauce is
'seared' on the ribs at the end.
On a busy day, over 500 chicken halves and several hundred pounds of ribs are cooked over
approximately 1000 pounds of charcoal. PJ's uses over 40 tons of briquets during the
course of the season.
